The Science
Solanine and chaconineSolanine and chaconine are concentrated in green skin, eyes (sprouts) and plant tops. They disrupt cell membranes and inhibit cholinesterase, affecting the GI tract and nervous system. Cooking does not reliably destroy these toxins.
